Breakfast Pizza


This breakfast pizza recipe is a great alternative to egg casseroles and other popular breakfast or brunch recipes.

 




Ingredients:

Crust:
3 cups all-purpose OR bread flour
1 envelope RapidRise Yeast
1 teaspoon salt
1 cup warm water (120° F to 130° F)
2 tablespoons olive oil

Toppings:
3 large eggs, lightly beaten
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 cup shredded cheese
1/2 cup bacon or ham, cooked and diced
OR cooked, crumbled sausage
cooking spray


Directions:

In large mixer bowl, combine 1 cup flour, undissolved yeast, and salt.  Add warm (120° F to 130° F) water and olive oil.  Mix for 2 minutes at medium speed of electric mixer with dough hook in place.  Add 1 cup flour and continue mixing for 2 minutes, scraping bowl occasionally.  Stir in enough remaining flour to make a soft dough; mix until dough forms a ball and does not stick to sides of bowl, 3-5 minutes. 

Preheat oven to 400° F.

Roll dough into a 14-inch circle; place on a baking sheet or pizza pan sprayed with cooking spray.  Form a standing rim by pinching the outer edge of dough.  Add salt and pepper to eggs and stir well.   Pour egg mixture onto pizza dough.  Sprinkle with shredded cheese and bacon, ham, or sausage.  Carefully place in oven and bake for 20 minutes or until eggs are set.  Serve immediately.

Serving Suggestions
Try adding a total of 1/2 cup of any of the following vegetables for added flavor and nutrition: diced bell peppers, sliced mushrooms, chopped tomatoes, minced green onion or chopped fresh spinach.
