Whole Wheat Pumpkin Bread Recipe

Here is a pumpkin bread recipe that is made with 1/2 whole wheat flour and 1/2 unbleached flour. Chopped nuts and raisins are added for extra flavor and texture. The recipe makes 3 loaves of bread.

Ingredients:

2 1/2 cups honey
1 cup oil
2 eggs
1 large can pumpkin
2 1/2 cups sifted unbleached flour
2 1/2 cups sifted whole wheat flour
4 teaspoons cloves
1 teaspoon cinnamon
1/2 teaspoon salt
6 teaspoons baking powder
1 cup water
2 cups chopped nuts
2 cups raisins, optional

Directions:

Preheat oven to 350°F. Grease 3 loaf pans.

Mix together first 4 ingredients. Add dry ingredients alternating with water. Add nuts and raisins.

Bake 1 hour at 350°F.

Cool in pan for 10 minutes before removing.

Yield: 3 loaves
