Semolina Bread Recipes


What is Semolina?

Semolina (Durum) is a high-protein wheat flour that is used in pastas. When added to breads, it provides a sweetness and almost winey aroma.

Semolina has a creamy color and a slightly gritty feel when dry but can produce a surprisingly smooth and extensible dough. Bread doughs made with Semolina are wonderful to work with.

Altamura is a small town in Puglia, not far from the Bari in southeast Italy. In 2003, Altamura achieved DOP (Protected Designation of Origin) status for its bread, which is made with semolina milled from durum wheat grown exclusively in the immediate area.

Pugliese is a rustic Italian bread similar to ciabatta. It utilizes a blend of durum and regular bread flours. I made this version with a combination of 50 percent durum and 50 bread flour.

This Semolina (Durum) Bread utilizes an old-fashioned type of sponge called a “flying sponge”.


Semolina Sourdough

This Semolina Sourdough is made with a sourdough starter (liquid levain) which gives it a little bit of a tangy flavor.  It’s made with about 40% bread flour and 60% durum flour.  It can be shaped into round or oblong loaves or into an S-shape similar to the Pane Siciliano.
