Whole wheat is one of the most versatile of the dark flours. This section includes a variety of whole grain bread recipes that incorporate a portion or all whole wheat flour to provide added nutrition and flavor.

Whole wheat is called "whole meal" or "wholemeal" by the English and Irish, and "graham flour," after Dr. Sylvester Graham, who in 1837 advocated flour milled from the whole grain.
Whole wheat flour makes breads with a coarse, firm, rough texture and a dark brown color. White whole wheat flour makes pale golden breads with a sweet taste and light texture that falls somewhere between the texture of whole wheat and white breads.
Spelt flour, kamut flour, and triticale flour can be used as an exact substitute for whole wheat flours in baking recipes, although the flavors are deeper and richer, and textures will vary slightly.
