Here is a recipe for whole wheat buttermilk biscuits. Be sure to use finely ground whole wheat flour and stir it well to lighten it up.
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter or lard
1 cup buttermilk
Preheat oven to 425°F.
Mix flour, soda, and salt. Cut in butter or lard. Add buttermilk. Mix thoroughly, but do not overmix. Pat into 3/4" thickness on floured board or baking sheet. Cut biscuits and if desired dip in melted butter.
Bake at 425°F for 15-20 minutes. To save time, biscuits may be dropped.
