This easy maple cinnamon coffee cake can probably be made with ingredients you have on hand.
Cinnamon Coffee Cake
Ingredients:
| 1/2 cup butter OR margarine, softened |
| 1 cup sugar |
| 2 egg yolks, beaten |
| 1/4 teaspoon maple extract |
| 1/2 teaspoon salt |
| 1/2 teaspoon Ground Saigon Cinnamon |
| 1/4 teaspoon Ground Nutmeg |
| 2 teaspoons baking powder |
| 1-1/4 cups flour |
| 1/2 cup milk |
| 2 egg whites, stiffly beaten |
| Topping |
| 1/3 cup sugar |
| 1/2 teaspoon Ground Saigon Cinnamon |
Directions:
Makes: 9 servings
Prep Time: 20 minutes
Bake Time: 25 to 30 minutes
Preheat oven to 375º F.
Cream butter and sugar with electric mixer; add egg yolks and beat 2 to 3 minutes. Add maple extract, salt, cinnamon and nutmeg; mix well.
Combine baking powder with flour; add to batter alternately with milk. Gently fold in egg whites.
Place batter in greased 8-inch square baking pan. Mix 1/3 cup sugar and 1/2 teaspoon cinnamon; sprinkle evenly over top of cake. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.
