Flax and Whole Wheat Bread

Here is a good recipe for a nice whole grain bread. I use the Cuisinart to make my bread.

Flax and Whole Wheat Bread

Ingredients:
2 tsp. sugar
1/2 cup warm water 110 degrees
3 tsp. yeast
1 1/2 cups warm water
1/3 cup honey
1 tsp. salt
1/2 cup milled flax seed
3 cups whole wheat flour (I use King Arthur brand)
1/2 cup buckwheat flour (or use whole wheat)
1/2 cup quinoa flour (or use whole wheat)

Directions:

Warm 1/2 cup water, add sugar and sprinkle with yeast. Let sit for 10 minutes to proof.

To Cuisinart, add all flour, salt, honey, and flax seed. Mix dry to sift. Once yeast water is foamy, start Cuisinart and pour in until a soft dough forms. Add remaining water sparingly until a dough forms and no longer sticks to the sides of the bowl.

Remove and place in large bowl sprayed with oil. Put in warm spot to rise. Cover with towel and let double for an hour. Punch down after doubling.

Cut dough in half. Let it rise again for 20 minutes. Spray bread pans with non stick spray. Remove and shape into loaf shape. Place in bread pans and let it rise once more for another hour.

Preheat oven to 425. After last rising, place in oven for 8 minutes. Turn oven down to 350 degrees and let it continue to bake for 20 or so minutes.

Remove from oven and cool on rack. Slice and freeze any bread not immediately eaten. Nice and crusty on the outside and soft inside. Delicious.

This recipe makes 2 loaves. I sliced mine thin and get about 18 slices per loaf. I used an electric slicer.

Really Great Bread

I used all organic flour’s for this recipe including raw sugar and local raw honey. My children loved it and they refuse to eat whole wheat. I used organic whole qiunoa which I ground in the food processor—I had to use a little more flour than this recipe called for to make the dough come together but what a wonderful healthy, flavorful, and lightly sweet bread–this will continue to be a go to weekly bread with any meal.

Beth, You can find some tips on how to adapt recipes for your bread machine here: https://www.breadexperience.com/recipes-for-bread-machine.html. This particular recipe would probably work for a 2-pound loaf.

What pound loaf?

This recipe says it makes 2 loaves, but what pound loaves are they? I have a bread maker that can make a 2 pound loaf. Would this fit in there?

A tasty grain and nutty bread

This bread was fantastic! I substituted honey for the few tablespoons of sugar. I also used brown rice flour and spelt flour in place of the buckwheat and quinoa flour. Turned out fantastic. Add ins that I added: whole flaxseed, amaranth seed, and sunflower seeds. My fiance loved it and its become a Sunday afternoon must!

Flat bread
