Neapolitan Raisin Bread

Ingredients
4 cups All-purpose flour
1 and 1/4 cup water
2 tsp. instant yeast
1 Tablespoon sugar
1 and 1/2 tsp.salt
1 tsp grated orange rind
2 tsp. vanilla
1 and 1/2 cups raisins

Pour boiling water over raisins to plump them.

Mix all the other ingredients together in a separate large bowl. Leave it for 20 min to let the flour absorb the water, then knead for 7 minutes.

Add the plumped raisins and knead them into the dough.

Let rise until doubled, deflate, divide into 2 loaves. Form the shape you choose; I make palatone.

Put an enamel saucepan of hot water in the oven when you first put it on. Temp. 450 for 10 min then lower to 375 for 30 min. Check for doneness with thermometer.
