Whole Wheat Banana Bread

 

This easy recipe for whole wheat banana bread is made completely in the bread machine.

Note: Do not make loaves larger than recommended by bread machine manufacturer.

 

 

Whole Wheat Banana Bread Maker Bread

Ingredients:

1-Pound Loaf  (8 slices)
Use the 1-pound recipe if your bread machine pan holds 10 cups or less of water.

1/3 cup mashed ripe bananas
1 large egg
1/4 cup water (70 to 80°F)
1 tablespoon butter or margarine, but up
1/2 teaspoon salt
1 1/4 cups bread flour
3/4 cup whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons bread machine yeast
1/3 cup chopped pecans, toasted (or raisins)

2-Pound Loaf (16 slices)
Use the 2-pound recipe if your bread machine pan holds 13 cups or more.

2/3 cup mashed ripe bananas
2 large eggs
1/2 cup water (70 to 80°F)
3 tablespoons butter or margarine, cut up
1 teaspoon salt
2 1/2 cups bread flour
1 1/2 cups whole wheat flour
1/3 cup sugar
2 teaspoons bread machine yeast
3/4 cup chopped pecans, toasted (or raisins)

Directions:
Measure all ingredients, except pecans, into bread machine pan in the order suggested by manufacturer, adding bananas with water.

Select basic/white bread or fruit and nut cycle, adding pecans according to manufacturer’s directions; use light or medium/normal crust color setting, as desired. Do not use delayed-bake feature.

When cycle is complete, remove bread from pan; cool on wire rack.

    Trying the 2 Lb loaf I’ll let you know how it turns out. I think one of my boys was born with a piece of bread in his mouth so he’ll give me the straight in it. I’m learning with the machine I have — nothing like a little construction work. thanks for sharing the recipe. Appreciate it.

    Made the 2# loaf.
    Switched whole wheat and bread flour amounts.
    added 1/2t.yeast and cinnamon.
    Added 2t. Gluten.
    Brushed top with milk and sprinkled cardamom and cinnamon sugar.
    Excellent results!! Will make again.

      Thanks for sharing the substitutions you made. I love the idea of adding cinnamon in the batter and sprinkling cardamom and cinnamon on top. Yum!

    I made the recipe with a few changes – I used 100% whole wheat flour, ( 4 c.)so increased frozen banana to 1 3/4 cups (which allowed me to use more frozen bananas up; the whole reason I made this recipe :)) I omitted the sugar, and did add raisins. It came out very well – slight sink in the middle, but good taste.
    I baked it on whole wheat setting, instead of white yeast bread setting.
    I will make this again! It is not as sweet and cakey as some might prefer, but in case others may want to try a whole wheat version, thought I’d share my experiment.
