Preparing buttermilk biscuits with whole wheat is a great way to add whole grains to a meal. Make these whole wheat biscuits lighter by using finely ground whole wheat flour and stir it well to introduce air into the flour.

Whole Wheat Biscuits

Ingredients:
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter or lard
1 cup buttermilk

Directions:

Preheat oven to 425°F. Mix flour, soda, and salt. Cut in butter or lard. Add buttermilk. Mix thoroughly, but do not overmix. Pat into 3/4″ thickness on floured board or baking sheet. Cut biscuits and if desired dip in melted butter. Bake at 425°F for 15-20 minutes. To save time, biscuits may be dropped.
