Bread Machine Blueberry Honey Whole Wheat

I had been looking for a recipe to combine blueberries with honey wheat and could find nothing. With a little experimentation, I was able to come up with this bread machine blueberry honey whole wheat loaf.

This sweet breakfast bread is a staple of our mornings and makes for excellent toast. It was developed using a Zojirushi PAC20, so amounts may need to be adjusted to suit your machine or tastes.

Bread Machine Blueberry Honey Whole Wheat

Ingredients:

  • 1 egg
  • 250 g water
  • 30 g extra light olive oil
  • 64 g honey
  • 60 g rolled oats
  • 400 g white whole wheat flour
  • 1 tablespoon vital wheat gluten
  • 1 1⁄2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 80 g dried blueberries

Directions:

  1. Gently beat egg to break up yolk. Combine with water, extra light olive oil and honey.
  2. Lightly stir mixture in the bread machine pan.
  3. Add rolled oats and again lightly mix the ingredients so the oats are soaking in the liquid.
  4. Add white whole wheat flour, vital wheat gluten, salt and active dry yeast.
  5. Add dried blueberries at your desired time. I find it best to add them with 8-10 minutes left in the mix cycle, prior to the add beep.
  6. Bake for 38-40 minutes for a light crust.

Note: The cycle times I prefer for this recipe are: Rest – 28, Mix – 22, Rise 1 – 40, Rise 2 – 25, Rise 3 – 40. The loaf can be shaped, if desired, after Rise 2.
