Flax Seed Whole Wheat Bread

Flax Seed Whole Wheat Bread

Ingredients:

1 1/8 cups water
2 tablespoons olive oil
1/4 cup honey
2 cups bread flour
1 cup whole wheat flour
1/4 cup nonfat dry milk
1/4 cup flax seed (ground)
2 tablespoon gluten
1 teaspoon salt
2 teaspoons SAF yeast or 2 1/2 teaspoons bread machine yeast

Directions:

I normally knead the dough in my bread machine and then bake in the oven at 350° for 30 to 35 minutes or until the instant read thermometer reads 190° to 195°.

You can use your machine totally by placing all ingredients in your machines fully assembled pan and in the order specified by your machines manufacturer.

After the first 10 minutes of kneading check the dough, it should form a smooth round ball that when touched with your finger is tacky. However, when you pull your finger away no dough should stick to it.

If the dough is too dry add 1 tbsp. of water at a time until the dough is the proper consistency. If the dough is too wet add 1 tbsp. of flour at a time until the dough is the proper consistency. It is normal for all recipes to need some sort of an adjustment.

Livvy, The baker who posted this recipe uses her bread machine. However, feel free to mix the dough using a wooden spoon or a Danish dough whisk or however you normally do it by hand. Then knead it, proof and bake like you normally do.

So there are no alternatives to the directions? What about those of us who do not have a bread machine and are doing things the old fashioned way?

using fresh milk instead of powdered milk

You should be able to use fresh milk in this recipe if you 1) scald it first to remove unwanted enzymes from the milk and 2) reduce the amount of liquid used in the recipe by the same proportion.

Rising and baking time? Size pan?

Hi…

Your recipe looks terrific, but you don’t say anything about how long it should be left to rise, how high it should rise in the pan during the 2nd rise, or what size pan to use? I don’t have a bread machine, so I need to do this in the oven.

What temperature?

Very moist

This is the most moist wheat bread I have ever eaten and I love the sweetness to it. I have to say that this raised very nicely as well for a wheat bread.

This is the BEST whole wheat bread recipe I have made! The loaf came out perfect, with a crispy crust and soft smooth center. A very filling bread, perfect for breakfast with a little butter!
