This simple blend of spices creates a uniquely flavored sauce that complements many food items. This sauce may be used as a sandwich spread, as a base for potato salad, as a topping for boiled eggs or as a condiment for ham, sausage, hot dogs, hamburgers – even Spam and sardines. Prepare at least a day ahead of use for proper blending of the spices and to moisten the dried chives.
Gourmet Turmeric Sauce
Ingredients:
1 quart grapeseed oil mayonnaise, chilled
3 tsp garlic granules
3 tsp turmeric powder (see Notes, below)
1/3 cup dried parsley
1/2 cup dried chives
1/4 cup stoneground mustard with horseradish
Directions:
In a chilled large bowl, slowly stir to combine chilled grapeseed oil mayonnaise, garlic granules and turmeric powder. Add remaining ingredients and stir slowly to mix completely.
If desired, clean a 1-quart jar and refill with blended sauce (1/3 cup extra sauce will need a separate container).
Refrigerate overnight before serving.
Notes:
For this recipe, “turmeric” refers to the natural spice and not to health food supplements (for best nutrition, this recipe requires standardized 95% turmeric powder without any additives).
If using capsules of turmeric powder, twist capsules to open and squeeze gently to empty powder into a small container for measuring (wash hands before continuing since turmeric stains easily). Stir ingredients slowly to avoid splattering turmeric powder.
Excellent as a fresh veggie dip or topping for many dishes. Add 1/2 cup Parmesan cheese for special occasions.
This sauce is used in Golden Garbanzo Savory Soup.

Intense onion condiment

Combine 1 cup turmeric sauce with 2/3 cup minced sweet onion and 1/4 cup dried chives.

A pint jar of Vegenaise (grapeseed oil mayonnaise) was first used to create this recipe, but the sauce has been so complementary to many food items that a quart jar is now my preferred quantity of this mayo.Add a cup of shredded Parmesan cheese to a batch to discover even more versatility. With or without the parmesan, this sauce is great for pasta salads!
I usually freeze the mixing bowl for 20 min. before starting the recipe to keep the mayo colder. And stirring the turmeric powder slowly cannot be stressed enough – it puffs into the air easily.
Technically, the turmeric powder is considered a supplement, but without any additives it’s just “standardized turmeric extract”.
