Mums Welsh Cakes

Ingredients

  • 2 cups all purpose four
  • ½ cup white sugar
  • 2 ¼ teaspoons baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon allspice
  • ½ cup salted butter (cold)
  • ½ cup currants
  • 1 lightly beaten large egg
  • 3-4 tablespoons of milk

Directions:
Mix the first 5 ingredients together. Cut in the butter and crumble it with your hands until it looks like a crumble mix. Add currants and stir together. Add egg and milk to mix. Make into a ball. Pat out on floured cold surface to ¼ inch thick. Cut out to 2 ½ – 3” circles. Cook on preheated griddle (5 mins each side) until brown. Put a little butter on when cooked and serve. When fully cooled, put in a storage container.

Great for breakfast or afternoon tea. Enjoy!
